In my pursuit to actually write about things that interest me, I want to let you guys in on a little tidbit about me – I LOVE TO COOK! I am not an amazing chef who has amazing recipes that will change your life BUT I have some interesting things to try out from family recipes to random things I throw together to Pinterest tries (and hopefully not fails).

Today, I want to show you something I threw together because I forgot to plan dinner. I’m sure this has been made by other people but I didn’t actually follow a recipe. I literally just cooked a bunch of things and prayed it went well!
So here it is!
I seem to always have Balsamic Glaze, Spinach, Olive Oil, Garlic, and Tomatoes on hand. I have made this with different pasta types, different proteins, and sometimes I add onion if I have it. This particular version has Steak and Fettuccine noodles.
Let’s dive in!
First, I cut some tomatoes in half – these particular ones are Grape Tomatoes but normally I use cherry. I don’t know why I bought these particular tomatoes, but it’s all the same principle! You throw in whatever you want. I season them with salt and pepper and let them chill in their own bowl while I prepare the rest of the dinner.
We eat pretty much eat any type of protein but I had some extra steak in the fridge so I thought ‘why not’. These particular ones are Sirloin Steaks seasoned generously with salt and pepper. I wish we had a grill BUT we don’t so I threw this in a pan with oil and seared each side for about 5 minutes. I like medium-rare but if you like more done or less done, you can adjust the time to whatever floats your boat. I also throw this into the skillet at the end so you can cook the steak more if you need to! After searing, I take them out and let them sit while I cook the rest.
In the same skillet I cooked the steak in, I threw in some chopped onions and garlic. I let these get nice and caramelized and then move onto the next step.
When I add the spinach, I usually add a whole bag or box depending on what I have. I cook the spinach down a good bit as you can see. I love adding spinach to almost everything – the pop of color looks great and it’s good for you!
I add the steak (and cook more if necessary). This lets all those tasty juice meld together.
Throw in the tomatoes and you are done with the skillet! I have cooked the tomatoes to varying degrees and it is always so good. Sometimes I cook them a lot and mash them up to make more of a sauce. If they are super fresh, I leave them more raw to add a little brightness.
Next we cook some pasta and add a tad of olive oil to give it a little extra flavor!
I can’t say why I buy this particular kind other than it says robust and I think that sounds fancy. As far as brands or anything, it was probably just on sale.
Toss it all together in a bowl and ta-da! You have some good looking pasta.
I love cheese so this is a great addition! The big flakes of it just make me smile.
The next part is the freaking all-star of the show though!
I am too lazy to make my own balsamic glaze but I found this! I feel like it’s like that one commercial (I have no idea which) when I say “I put this shit on everything” and really, I do. This stuff has so much flavor and you don’t have to make your own!! Is there anything better than semi-homemade? No. Laziness and convenience always wins.
Here it is! It is such an easy, versatile dinner that you can adjust as your mood changes. Want sauce? Go for it! Add more veg? Of course! Not a meat person? Make it your own way. This is my go-to for when I have no idea what the hell to make and want to use up random things in my house.
